Recipes: Tetsuya Inspired Kingfish Sashimi, By Craig McGill
Ingredients:
Fresh Kingfish fillet
Garlic
Lemon juice
Soy sauce
Orange zest
Pepper
Salt
Olive Oil
Japanese Shiso and Snow Pea tendrils (or use local seasonal leafy greens)
*Shiso is a Japanese herb with green or purple leaves. It has a peppermint and lemon-like aroma. The purple variety gives the best contrast in this recipe..
Recipe:
Cut kingfish into thin sashimi size pieces and cover large flat plate one layer thick.
Mix Japanese soy, grated garlic and lemon juice. Spoon it all over the fish.
Combine the pepper, salt and good quality virgin olive oil and lightly pour over the Kingfish.
Then sprinkle grated orange zest over the lot.
Add to a bed of Shiso greens and Snow Pea tendrils
Serve chilled as is and mix with chopsticks as you eat it.
